The Japanese order take-away food often and here I think of those who live in a big city. There are several reasons for this.

Most Japanese work 10-15 hours a day. Of course, there are exceptions depending on the industry you work in. That means the average Japanese does not have time to prepare and cook when they get home.

There are many Japanese who choose to buy take-away food on their way home from work. On almost every street in the major cities, you will find a small eatery. They often specialize in making healthy and tasty take-away dishes that are freshly prepared and ready to take home.

The reason why you training as a Japanese sushi chef never stops

In 2002 I heard about the concept “In Japan your training will never stop”. At the time, I didn’t really think about it.

It is true.

In 2006 I was trained to become a Japanese Sushi Chef & Sake Sommelier in Los Angeles by a very skilled Executive Sushi Chef with 40 years of experience.

In 2012 I traveled back to Los Angeles where I improved my techniques and was introduced to a nigiri technique that takes 20 years to master.

In September this year, I visited the restaurant in Los Angeles where I assisted a Japanese sushi chef named Mino who has worked as a sushi chef for 36 years.

Just before turning back to Denmark my Japanese sushi chef  instructor Toshi said that I can come and go as I pleased which means that my training is not finish.

In this slightly cold and dark time in Europe it is nice to celebrate the joyful month with wonderful food, snacks and fun – and yet!

I also try to eat more varied in December month so my body doesn’t get use to food with high fat or sugar.

In December I eat more fish and vegetables than usual. Sushi seaweed is the vegetable in the world that contains the most vitamins and minerals. Sushi is the right thing I prefer to eat.

I always make my own sushi to, so I get exactly what I want it to eat.

Have you ever tasted sushi prepared with seasonal fish?

FiskAs you very well an aware of there is many local fish of very high quality. Fish that are suitable and perfect for sushi but they are very often exported abroad.
For some strange reason mostly tuna, salmon and white fish find their way to sushi restaurants in many countries.

It is a pity that there are many local fish which are suitable for sushi but not being used. They have unique flavors and taste.
If want to try to use local fish for sushi you have to make sure that the fish is of best quality possible.

This is way the weather affects cooking of the rice?

RiceThe weather does always affect food preparation. Cooking sushi rice is precision work and therefore I give more attention to the small details such as the how the weather affects the boiling of sushi rice.

You use significantly less water when cooking sushi rice compared to ordinary rice that is reason why the smallest details becomes visible. Depending on whether it snow, rains heavily or if it is a hot summer it will affect also the amount of water to be used.

You may find that you need to adjust the amount of water during cooking that is one of the reasons why it can be a challenge to cook sushi rice.

Is vegetarian sushi as tasty as sushi with fish?

Vegetarian sushi is much more than a roll of rice and cucumber.

In Europe you can find a large selection of high quality vegetables. You can buy many different types of vegetables with unique flavors and aroma. There is a big difference between aromas and flavors depending on when seasonal vegetables are harvested.

Vegetarian sushi can taste better than sushi with fish. However, it is more challenging to make sushi with vegetables because vegetables come in different sizes. The texture is aoso different depending which vegetable you are using.

Vegetarian sushi is ideal for a weekday with a little less meat.

What type of soy sauce uses exclusive Japanese sushi restaurants in Tokyo?

Exclusive Japanese sushi restaurants differ from other restaurants. In Europe, most people are using the Michelin guide as a yardstick that is not the case in Japan.

In Japan there are many exceptional restaurants that never find their way to the Michelin guide. In these types of restaurants the sushi chefs use a unique soy sauce for the sushi pieces that cannot be bought in shops.

It is a soy sauce that the sushi chefs have often developed themselves but it does happens that it is a recipe that has been passed on for generations. Unfortunately, the soy sauce is secret.

How much soy does the Japanese eat?

A lot. The Japanese eat most soy in the world.

Most people think of tofu which many associate with vegan food in Denmark. Tofu is far from the only soy product that the Japanese eat.

The Japanese eat a lot of miso which is part of many different contexts in Japanese cuisine. In Japan, soy sauce is considered a spice on the same level as salt and pepper in European food.

In Denmark most people know that soy sauce is used in sushi, but also in other classic dishes such as noodle soups, yakitori, tempura, sukiyaki and smoothies. It is a healthy and slimming access to proteins.

Which vegetable is really good for sushi?

Farmers markets

There are several different vegetables that are suitable to be used for sushi.

In Denmark you can get different kinds of asparagus it is a vegetable that thrives in Denmark. The asparagus season is in spring. In Copenhagen you can go to the farmers market that sells different kinds of asparagus with unique aromas and flavores.
The supermarket usual has one kind of asparagues.

Asparagus is vegetable that is perfect for sushi since you can use it in different ways.

The season in spring is quite short so I encourage you to buy different varieties of different quality and enjoy the different flavors of taste. You don’t necessarily have to make sushi. You can also steam them quite easily and eat them with a little butter and salt.

Which vegetables are not suitable for sushi?

The vegetables are best suited for sushi must have texture and taste.
I’d rather not favor certain vegetables for the reason that there are local specialties that make that one vegetable is preferred over another.

There are always vegetables that are more suitable than others. Vegetables such as peppers, peas, lettuce, green beans, avocado and more.
