Yes, there is a difference in quality in Japan. As in Denmark, the quality of sushi differs but the range is much bigger.

At the lowest level, you will find Running sushi, which most people outside of Japan have heard of. In Japan, most of the students eat at running sushi.

In Japan, there are several levels of gastronomy. Most people in Denmark consider three star Michelin restaurants as the highest. In Japan, the level is also very high but there is a level above Michelin restaurants. Yes, you heard right!

This is because there are restaurants that the Michelin Guide has not discovered.

There are also restaurants that are so popular that they are removed from the guide.
There are restaurants that are so in demand that they are unable to accommodate the many guests.

There are also chefs who are so high in age that they have chosen to slow down and only cook for their regular’s guests. The type of restaurants tourists rarely hear about.

Why is it difficult to cook sushi rice?

There are several reasons why it is difficult to cook sushi ris. You use less water compare to “normal” rice which means that it only that it takes very little to get them wrong.
The perfect sushi rice is solid but at the same time soft. It very diffcult to cook perfect sushi rice.

Another factor that has a major influence on cooking sushi rice is the weather. If it rains, snow or a hot summer day it will affect the process of cooking of sushi rice.

It means that you might have to change the way you cook the rice every time.

Can all types of soy sauce be used for sushi?

Most people are not aware of how important the choice of soy sauce has on the entire sushi dinner.
The right soy sauce can enhance the dining experience by 40% it is very important that you use the right soy sauce when you eat sushi.

Sushi should have a fine and delicate taste and it is important to select a soy sauce that is not too strong in flavor or contain too much salt.
If you use a soy sauce that is too strong in flavor it will create an imbalance and you miss the full dining experience. If you use a soy sauce with too much salt the salty taste will cover the whole dining experience.

Is it a good idea to buy fish for sushi in the supermarket?

I think that it is a bad idea.

Sushi is a dish where all the fish is basically eaten raw. This means that fish must be as fresh as possible and of the highest quality.

The quality of fish used for sushi is only available in a limited amount in the world seas. This is known to all who sell fish.

If you buy fish in the supermarket, then you do not know where it has been caught. There are some places in the world where the fish are better than other.

Besides, you also don’t know how old the fish is. On the packaging of fish sold in the supermarket you will be able to see when it has been packed and shelf life. It is far more difficult to find out when the fish has been caught.

Do you know how use Japanese knife techniques?

The level of gastronomy in Japan is very high one reason for that is that Japanese chefs spend several years learning how to use different cutting techniques.
In Japan the quality of the dishes depends on your ability to prepare raw materials by using different cutting techniques.

If you do not know how to use your knife you will find it difficult to make a extraordinaire tasty dishes.
You will not be able to bring out the unique flavors of the ingredients and create unique dishes.

Using a knife the right way is just as important when making sushi as in making traditional Japanese dishes.

What is the biggest challenge as a beginner?

There are many challenges if you’ve never made sushi before.

There is of course a big difference if the sushi is made at home or in in a restaurant.

There is a few challenging such as,

Selecting the Japanese ingredients and raw materials used for sushi.
To cook tasty and perfect rice.
To fillet and cut fish in the right quality for sushi.
To prepare various raw materials for sushi
Create tasty sushi so the raw materials are in harmony and becomes a unique dinning experience.

My most important task at the different sushi classes  that I give is to teach my attendants the Japanese tools to make tasty sushi in a quality that you can delight family and friends with homemade tasty sushi.

Most people believe that sushi is one of the most important dishes in Japanese cuisine. The Japanese love sushi, but sushi makes up less than 15% of Japanese cuisine. That’s because Japanese cuisine has so many tasty dishes and unique styles to offer.

One of the ingredients that the Japanese eat almost every day is cabbage. In Japan, cabbage is not just cabbage.

There are several different types of cabbage and different kinds of kale. Some varieties of cabbage and kale are eaten raw and others are best suited for squeezing juice.

There are also the varieties of kale that are prepared in different ways e.g. for a soup.

Common to all of them is that cabbage and kale is prepared in a delicate way so it is a gastronomic experience to eat cabbage and kale several times a week without it getting boring.

In Kyoto there are 1,600 temples and all of them are unique and beautiful in their own way. There are temples that stand out more than others.

The Golden Temple also called Kinkakuji in Japanese, is the most visited temple in Kyoto. The temple is located in northern Kyoto about 40 minutes by transport from Kyoto station.

The large temple is located in a large beautiful Japanese garden where flowers and details of the garden are highlighted in the most beautiful way.

How often do the Japanese order take-away food?

 

The Japanese order take-away food often and here I think of those who live in a big city. There are several reasons for this.

Most Japanese work 10-15 hours a day. Of course, there are exceptions depending on the industry you work in. That means the average Japanese does not have time to prepare and cook when they get home.

There are many Japanese who choose to buy take-away food on their way home from work. On almost every street in the major cities, you will find a small eatery. They often specialize in making healthy and tasty take-away dishes that are freshly prepared and ready to take home.
