Does Japanese sushi taste very different?

Yes, it does.

Here the other day I ate sushi which was made in a Danish sushi restaurant.
The sushi tasted different because other ingredients are used. Denmark is also one of the countries where many kinds of topping are used on sushi pieces.

The sushi with topping had a less flavor than the sushi I make without topping which are normally served in Japanese restaurants.

Raw materials do have lot of flavor and taste and you should only use topping to give the dinning experience an extra dimension.

How the Japanese fish monger keeps fish in Tokyo

The Japanese have some strict rules for handling fish. On the cooking class I teach I follow the Japanese rules which are more strictly than the Danish rules. I do this for the health of the students.

It does matter how fish are stored.
All fish species have their own bacteria and to prevent the different bacteria from being transferred to each other it is best to keep fish separate.

In Japan, it is not enough that the different fish are kept separate. They are also wrapped in tightly closed films so that the fish do not dry out.
It is also important keep the fish cold all the time unless they are used in the preparation of sushi.

Time for new habits – is that you?

The new year 2019 has started.

I am busy planning what will happen during the year. Like so many others I also think that I live a busy life with various activities.

So that’s why I am looking at my eating habits to see how I can live a healthier life with less meat with small changes. One of the small adjustments that I am sure will do more is to eat more sushi in everyday life.

You do not have to eat that much sushi before you have eaten the amount of fish and vegetables that the National Board of Health recommends.

Is it difficult to cut fish for nigiri?

FiskIt is difficult to cut fish nigiri and there are several reasons.

There are not two species that are exactly alike.
Even within one species there is a big difference such as tuna.
The size of the fish will be different and the structure and the fibers of the fish meat is also different. That will have a direct impact on how you slice the fillet.

You can always tell if a fish for nigiri is cut the right way. The the fish slice is silky and almost melts in your mouth.
To get the experience it is important to have knowledge of the fish and Japanese cutting technique to fillet the best way possible.

If you do not know what ingredients Japanese chefs use to make sushi you might be several stores befor you are ready to make sushi.

There are many store that do not know which ingredient are the best for sushi. The only one who knows that Japanese trained sushi chef or attendances who have taken a Japanese sushi class.

What is the biggest challenge of Japanese trained sushi chef?

The biggest challenge as a Japanese trained sushi chef is that the better you get the harder it’s also making sushi.

It may sound a little odd.

Making sushi as a professional is precision work because Japanese sushi is very simple in its expression and the use of raw materials. When you make food with as few raw materials as you do when you make sushi you fall through like as sushi chef if you do not master the techniques.

Over time, it’s actually gets more challenging to make sushi because you get more detailed  you also work with more and more difficult techniques as you get better and better.

Can pudding rice be used for sushi?

RiceIt is a question that I sometimes get on my sushi courses.

I have never tried to make sushi with pudding rice and I can understand that some have tried with the lack of sushi rice. For pudding rice is a short grain rice as sushi rice however, I think they are slightly shorter.

I do not believe that pudding rice can be used for sushi. It is another type of rice and the texture when they are cooked is not the same as the pre-cooked sushi rice.

As a sushi chef I have cooked sushi rice over the years with various brands and quality. Even within the sushi rice is a big difference in how the rice grains react when they have been washed, boiled and cooled down.

Is it a good idea to eat sushi when you are pregnant?

Both yes and no.

The Japanese eat very raw fish as a nation and they are a population that has children like all other countries.

During the training to become Japanese Sushi chef I learned about the Japanese rules that apply to pregnant women. According to the Japanese rules you should not eat raw tuna during the first 3 months of pregnancy. Then you can eat sushi everyone else.

I have full understanding of those who choose not to eat raw fish throughout the pregnancy. I also have full understanding of the pregnant women who choose to enjoy fish while they are pregnant.

I do not perceive raw fish as the biggest “sinner” in relation to pregnancy. I will be more concerned about the chemicals and additives that are in hair dye, makeup, perfume etc which a lot women.

Tokyo is famous for high quality of restaurants. Tokyo is the city in the world that has the most Michelin stars.
With approx. 20 million citizens who appreciate high quality food the competition between the restaurants is very high.

The Japanese cuisine also offers many different styles. The Japanese cuisine contains as many styles as all European cuisine. There is a style for the busy family, career woman / husband, family taking a day off, family gathering, for vegetarians, business people and many more.

At the moment many Danish and international Michelin chefs travel to Japan to be inspired by Japanese restaurants. Japanese chef’s way of looking at raw materials, compiling a menu and using different cooking techniques has a vigilant eye all over the world.

The reason why sushi rolls have become a popular dish in Denmark

I do not think I know any other country where you eat so many sushi rolls as in Denmark. It is not negative meant.

One of the reasons might be that the Danish people do not eat as much fish as the Japanese do in Tokyo.
The selection of rolls is also very large in Denmark. Most sushi restaurants in Denmark have a large selection of sushi rolls on the menu which offers different flavors. Some restaurants have their own signature scroll.

By eating sushi rolls you will also be eating different kinds of vegetable which support your wellbeing.
