At what temperature should you eat sushi?

Sushi is a very unique dish that should be eaten at a certain temperature.

There are many people who buy take-away sushi at the moment. There are some things to do if you have decided to eat sushi one night.

Once you have picked up or your sushi has been delivered, you should store the food in your fridge. You must keep the food there until 15 minutes before you are going to eat. Sushi should and tastes best at room temperature.

What you do 15 minutes before eating is that you take the food out of the fridge. You take the lid off and place the food on the kitchen tables (in the shade) and leave it for 15 minutes.

In meantime you can set the table.

Where is it best to buy fish for sushi?

It is hard to say where it is best to buy fish for sushi. I will only buy fish at fishmongers in Copenhagen.

There are some basic things to look for in a fishmonger.

Fish for sushi should never be placed with other fish. Fish for sushi has a completely different quality than”ordinary” fish for cooking. To ensure that bacteria are not transferred between the 2 types of fish they must be kept separate.

Fish for sushi should be perfectly fresh. On the sushi course for beginners, I talk about what to look for if you want to make sure you leave the fishmonger with fresh fish.

How many attendants are there on your sushi course?


In the classes, that I hold there have always been fewer attendants compared to other culinary schools. This means that my students get more out of the course when there are not so many participants.

Including Covid-19, I have sharpened the number of attendance I will continue to do so regardless of how the infection developed in Denmark. There will be no more than 9-10 participants.

Why seaweed used for sushi is so healthy?

The Japanese are the population of the world who live the longest in the world and for good reason. The Japanese eat large amounts of seaweed and it is not only when they are having sushi.

There are many different types of seaweed depending on whether it is to be used for soups, cold dishes, hot dishes, a starter or a salad.
The different types of seaweed produced to be consumed are very healthy. Seaweed used for sushi is the vegetable in the world that contains the most minerals and vitamins.

So with a very small amount of money the Japanese can eat large quantities of vegetables.

Okinawa miso soup is a healthy way to detox your body!

There are several different ways to detox the body.

Some years ago it was very popular to go on a fruit diet which typically lasted a few days. Some were happy with the diet others were decided poorly by eating fruit for several days.

Most people know about detox diet for example you drink different juices over 3-7 days. Juice diet can be a little difficult to implement since you will not be satisfied the same way as if you are eating a meal.

Like so many others I live a busy life. To make a radical change to my diet for a period of time to detox my body is not something I am fan of.

Do fishmongers know what type of fish is suitable for sushi?

All fishmongers know what kind of fish is used for sushi.

It is very important to ask for fish for sushi. Fish for sushi has a completely different quality than fish to be fried.

The reason for the difference in quality of fish is that fish for sushi being eaten raw. It is very important to use top quality fish. If you eat raw fish that has become too old you may become ill.

What is Japan’s preferred fast food?

The Japanese prefer the fast food dish ramen soup. There are several reasons for that.

It is a dish that is suitable for a busy everyday life. The Japanese live a life as busy as so many others consisting of work, family and various activities.

Ramen soup is a healthy and low fat dish. In Tokyo it is often made of fish stock.
It is a very popular dish in Tokyo which takes a noodle bar less than 5 minutes to cook.
It is a dish that most Japanese eat in less than 10 minutes with chopsticks.
Ramen soup is a dish that is made in many different versions from noodle bar to noodle bar. Yes, every noodle bar has their very own version.

Will fresh fish still arrive in Denmark even though the borders are closed?

Yep, it does.

Although the government has closed down for people to travel in and out of Denmark this does not apply to food.

There are many supermarkets that have ordered extra goods so their stock is full of goods. Special stores such as fishmongers still get fresh seafood delivered several times a week from abroad.

It ranges from tuna in Japan to salmon from the Faroe Islands. However, the fishmongers may well find that the amount of tuna entering Denmark is less than it usually. This is not because the quantity of goods from the producers has decreased.

There are some food suppliers in Denmark who order fewer products from abroad at the moment. This is because the restaurant industry has been shut down for a period of time.

However, the most sought after items such as fresh salmon, marinated herring and other Scandinavian seafood will be found at the fishmongers.

Recipe: Pickled Chinese radish

The recipe is for a glass.

Ingredients:

4 cup rice vinegar (Uchibori – comet su)
1 cup sugar
1 Jam glass (h: 13 cm x w: 10 cm)

Course of action:

1. Rinse the Chinese radish and peel off the skin.

2. Cut the Chinese radish into 3 millimeter thick slices on a mandolin.

3. Heat the rice vinegar and sugar in a saucepan.

4. Boil the vinegar marinade until the sugar has dissolved.

5. Add the Chinese radish slices in a sterile jam glass.

6. Pour the vinegar marinade over.

7. Let it all cools down.

8. Close the glass and refrigerate for 4 days.

9. Ready to be eaten.

 

Recipe: Champon noodle soup

Japanese noodle soup made on pork stock.
The recipe is for one person and the total time spent is 13 hours.

Broth:

2 kg of pork bones
1 piece (15×15 cm) Kombu

The soup:

4 dl stock
2 tbsp. soy sauce (Sanbishi)
1 tbsp. mirin
3 tbsp. cream
½ tsp. salt
Sprinkle pepper
1 pk. pre-cooked ramen noodles
2 thick slices of pork
10 Shime ji mushrooms
1 spring onion
1 scallop
1 handful of bean sprouts
2 handfuls of white cabbage

Method

1. Pork bones come in a large spot with a piece of Kombu.

2. Cover the bones with 3 cm of cold water and set to boil.

3. Cook the stock under low heat for 12 hours.

4. Remove the foam in the surface with a tablespoon.

5. Remove the fat at the top of the broth with a tablespoon.

6. Continuously add some water to the broth.

7. Brush the pork slices with a little olive oil, sprinkle with salt on both sides and bake at 80° for 1 hour.

8. Rinse the spring onion and cut with an angle to thin slices.

9. Rinse the bean sprouts.

10. Cut the mushroom across at the root.

11. Rinse cabbage and cut into 1 cm strips.

12. Cut the scallop into thin slices.

13. Cut the pork to 1 cm thick strips.

14. Place the pre-cooked noodles in a pot with boiling water for 15 seconds to loosen the noodles.

15. Remove the water and add the noodles to the serving bowl.

16.Pure mirin, soy sauce, cooking cream, and pepper into the broth

17. Add scallops and mushrooms to the soup and cook for 2 minutes.

18. Add spring onions and pork to the soup and cook for 1 min.

19. Cabbage added to the soup and it all turns.

20. Pour it all over the noodles and the dish is ready for serving.
