From time to time I meet a person who is vegetarian or vegan. They are a little challenged when it comes to finding a sushi menu which they find interesting and delicious.

Vegetarian sushi is an underestimated dish.
There are so many different kinds of raw materials that are suitable for vegetarian sushi. Tasty and interesting vegetable beyond avocado and cucumber.
In Europe, you will experience that every season offers unique rar materials which are perfect for vegetarian sushi.

However, to turn raw materiale into to tasty and delicious sushi pieces you will have to sushi several Japanese cooking techniques since vegtables can be quite a challenge.

Does Japanese sushi taste very different?

Yes, it does.

Here the other day I ate sushi which was made in a Danish sushi restaurant.
The sushi tasted different because other ingredients are used. Denmark is also one of the countries where many kinds of topping are used on sushi pieces.

The sushi with topping had a less flavor than the sushi I make without topping which are normally served in Japanese restaurants.

Raw materials do have lot of flavor and taste and you should only use topping to give the dinning experience an extra dimension.

Japanese donburi with tuna

In 2013 I made this beautiful fisherman dish which called doburi.

The dish looks very simple but it is certainly not. If you make a dish that is so simple then the sushi rice must be cooked to perfection.
The tuna must be equally large and cut on such that the slices are silky and melt in the mouth. Needless to say, you must handle the cutting techniques used to cut tuna.

Can other types of rice be used for sushi?

It is a question that I got on one of my courses.
The attendants had experimented with different types of grains for to see if there were other alternatives.

Until now, I have not heard of other cereals suitable for sushi. In the sense that it is not yet succeeded anyone
to find a substitute that contains the qualities which make sushi rice.

The white sushi rice as which everybody knows is the easiest rice to boil over other cereals.
The consistency of the white finish cooked sushi rice is also best.

They must be firm but at the same time they must be soft. They should not be cooked too much so they become mushy. But they must not be too hard and still a bit raw inside. So it is a very delicate balance you have to try to hit.

I have not yet come across other types of suitable rice.

Can pudding rice be used for sushi?

RiceIt is a question that I sometimes get on my sushi courses.

I have never tried to make sushi with pudding rice and I can understand that some have tried with the lack of sushi rice. For pudding rice is a short grain rice as sushi rice however, I think they are slightly shorter.

I do not believe that pudding rice can be used for sushi. It is another type of rice and the texture when they are cooked is not the same as the pre-cooked sushi rice.

As a sushi chef I have cooked sushi rice over the years with various brands and quality. Even within the sushi rice is a big difference in how the rice grains react when they have been washed, boiled and cooled down.

Is there a difference in the type of sushi rice?

Most people would probably think that the quality is not as crucial.
Like so much else the quality of sushi rice how just as much impact on how tasty your rice will be.
There is a big difference how many times you need to wash the sushi rice, how much water you must use and how long you should cook the rice. The cheaper rice you use the harder it make good sushi rice.

It’s worth spending a little extra money on buying rice of good quality.

What is the biggest challenge when making sushi?

Zoë EscherThe biggest challenge is to cook sushi rice to perfection.

Sushi rice are more delicate to cook than other types of rice. The weather can influence the cooking of sushi rice.

In Denmark we do not have extreme weather fluctuations which you can be experienced in the US or in Japan.
If you cook sushi rice on a regular basis all year you will notice how the weather affects the sushi rice.

The cooking time and the amount of water can slightly vary from the weather. You must just stay on your toes and constantly keep track of how the rice is cooked.

Why does it take so long to become a sushi chef?

Zoë EsccherIt takes several years to become a skilled Japanese sushi chef.
Since sushi is a dish that you don not boil, fry or cook sushi you have to be very conscious to every detail.

In Japan sushi chefs only use a few ingredients to make sushi such as rice, fish, the restaurant’s homemade soy sauce and in some cases topping to suit the fish.

A sushi chef must master the following,

Cook the rice to perfection.
A knowledge of the various fish, their age, fat content, the structure of the meat and which parts of the fish are regarded as a delicacy.
A knowledge of which vegetables and Japanese ingredients used for sushi.
To be able to transform the very few ingredients into a gourmet experience the sushi chef knowledge and experience to highlighting the fish aromas and flavors by using different cutting techniques.
The vegetables and topping is used for sushi, lift and flavor experience an extra dimension.

Can you save vegetarian sushi for the next day?

VegetarsushiVegetarian sushi can be saved for the next day since it does not contain fresh fish.
It is not always a good idea to do that it depends a bit on how careful you have been with the preparation of materials such as the rice.

By that I mean that if the rice is not cooked to perfection and kept in the right way the individual rice grains will get tougher and they will also looser their texture.

The vegetables should be prepared or cooked to perfection, otherwise any moisture will get sucked into the rolls and it will give a cloth-like feel.
