Every year I travel to Brussels in December and spend a few days in the company a delgation of high-grade Japanese Kendo teacher.

A couple of years ago I asked them,

What is the most important thing when you buy sushi?

They all said that sushi rice cooked to perfection is the most important thing for them. None of them are interested in eating sushi rice which has a consistency like pudding. They are also not interested in eating sushi rice that is still uncooked in the middle.

For Japanese, they are the perfect sushi ripe firm but soft in consistency. It is consistency that can be difficult to hit if you are not used to boiling sushi rice.

Is there a difference in the quality of sushi in Japan?

Yes, there is a difference in quality in Japan. As in Denmark, the quality of sushi differs but the range is much bigger.

At the lowest level, you will find Running sushi, which most people outside of Japan have heard of. In Japan, most of the students eat at running sushi.

In Japan, there are several levels of gastronomy. Most people in Denmark consider three star Michelin restaurants as the highest. In Japan, the level is also very high but there is a level above Michelin restaurants. Yes, you heard right!

This is because there are restaurants that the Michelin Guide has not discovered.

There are also restaurants that are so popular that they are removed from the guide.
There are restaurants that are so in demand that they are unable to accommodate the many guests.

There are also chefs who are so high in age that they have chosen to slow down and only cook for their regular’s guests. The type of restaurants tourists rarely hear about.

What is the biggest challenge as a beginner?

There are many challenges if you’ve never made sushi before.

There is of course a big difference if the sushi is made at home or in in a restaurant.

There is a few challenging such as,

Selecting the Japanese ingredients and raw materials used for sushi.
To cook tasty and perfect rice.
To fillet and cut fish in the right quality for sushi.
To prepare various raw materials for sushi
Create tasty sushi so the raw materials are in harmony and becomes a unique dinning experience.

My most important task at the different sushi classes  that I give is to teach my attendants the Japanese tools to make tasty sushi in a quality that you can delight family and friends with homemade tasty sushi.

Los Angeles is a city with many Japanese sushi chefs

As a sushi chef Bar Hayama is the restaurant I know best. In 2006 I was trained to become a sushi chef at California Sushi Academy. Next to the culinary school were Toshi’s sushi restaurant where we worked in the sushi bar and did catering.

In 2012, I was back in LA where my teacher Toshi introduced me to a nigiri technique that takes 20 years of master.

There is a big difference between whether you are trained by Japanese sushi chefs or trained in Denmark.

Japanese sushi chefs have other work procedure and use completely different techniques than European sushi chefs. When I work with Japanese sushi chefs with 36 years of experience the quality and taste of the sushi being produced is something completely different.

Yes, another evening of great Japanese sushi in Los Angeles. Japanese sushi is very simple in its expression but the individual sushi pieces just melt on the tongue.

Last night there were several Japanese sushi chefs inside and outside the sushi bar. I get the most out of talking about sushi with Japanese trained sushi chefs.

This Friday night I will be back in the sushi bar in Los Angeles. It is going to be great I learn a lot from Mino a Japanese sushi chef with 36 years of experience.

The reason why my Japanese sushi chef back ground a little different?

What many are not aware of is that I first started training the Japanese fencing called kendo in Denmark.

In 2004, I traveled to Japan for the first time on a training camp. During the stay I was introduced to Japanese cuisine both traditional dishes but also sushi.

In 2006, I was educated to become a Japanese Sushi chef & sake sommelier. Since then, I have traveled to Japan almost every year to inspire Japanese gastronomy, practise kendo kata and visiting friends.

What type of soy sauce uses exclusive Japanese sushi restaurants in Tokyo?

Exclusive Japanese sushi restaurants differ from other restaurants. In Europe, most people are using the Michelin guide as a yardstick that is not the case in Japan.

In Japan there are many exceptional restaurants that never find their way to the Michelin guide. In these types of restaurants the sushi chefs use a unique soy sauce for the sushi pieces that cannot be bought in shops.

It is a soy sauce that the sushi chefs have often developed themselves but it does happens that it is a recipe that has been passed on for generations. Unfortunately, the soy sauce is secret.

The reason why the weather affects the sushi rice cooking?

NigiriMost people are not aware of that the weather does always affect cooking process.
Cooking sushi rice is detail oriented work. Just a small change in the weather will have a direct influence on the quality of the cooked sushi rice.

When you cook sushi rice you will notice these small changes sinces you use significantly less water for cooking sushi rice compared to ordinary rice. Depending on whether it snows/rains heavily or it is a hot summer day it will affect the amount of water to be used.

Thar is the main reasons why it can be a challenge to cook sushi rice.

What kind of fish do the Japanese prefer?

The Japanese have a slightly different view of sushi.

In Japan it is believed that all types of high quality fish can be used for sushi. This means that most sushi restaurants have 15-20 different fish on the menu. With such a large selection the Japanese prefer to eat nigiri.

But before a fish enters a sushi bar the quality of the fish has to meet the specific criteria.

Which vegetables are not suitable for sushi?

The vegetables are best suited for sushi must have texture and taste.
I’d rather not favor certain vegetables for the reason that there are local specialties that make that one vegetable is preferred over another.

There are always vegetables that are more suitable than others. Vegetables such as peppers, peas, lettuce, green beans, avocado and more.
