In Japan, sushi restaurants only uses fish that are in season

In Japan, Japanese sushi chefs have a different view of fish. From childbirth Japanese children learn to eat all the ocean has to offer.
As a restaurant guest in Japan you will find that the menu in sushi restaurants looks different.

It is very normal that there are approx. 20 different kinds of seafood on the menu. In addition, the Japanese sushi restaurants replace the menu card several times a year.

This is because many fish can only be obtained in certain months over a year. Some fish species have to swim many kilometers every year, for example, to spawn.

If a fish is not in season it is not on the menu card.

Can all types of vinegar be used for sushi?

Not all types of vinegar are suitable for sushi.

There are many different kinds of vinegar in Denmark. There are some vinegar made in Denmark, others in Thailand, China or Japan.

It is always best to use Japanese vinegar for sushi and there are several reasons for that.

Japanese vinegar is made of rice grains. Since the Japanese vinegar is made on rice, the sour / sweet vinegar flavor suits the sushi rice.
If the vinegar were made on, for example apple the rice vinegar would have a completely different taste.

Rice vinegar is also used to preserve sushi rice so it can be kept at room temperature. Beside that, vinegar is also used as a kind of spice.

The aromas and fine flavors found in Japanese rice vinegar help to give the sushi rice the unique taste that characterizes Japanese sushi rice.

Does the weather affect the preparation of sushi?

The weather greatly affects the preparation of sushi. Right from handling og sushi rice, preparing ingredients and making sushi with your hands.

Japanese sushi is a dish that focuses on individual ingredients. I know well that in a lot of countries many different ingredients are used in most sushi restaurants. If you look at authentic Japanese sushi there are quite a few ingredients included.

When the food becomes so simple your “mistake” is easily shown since you cannot hide anything, including the weather.

It is one of the reasons it takes Japanese sushi chefs many years to cook sushi rice to perfection which is a must if you work in a sushi restaurant.

Is it best to use Japanese sushi rice?

There are many countries that produce rice for sushi such as Japan, the United States, Korea, Italy, and Thailand.

Using Japanese-produced sushi rice is not a must. In Japan, there are many different types of sushi rice of different grades. Japanese sushi rice is not always the best choice if you are not used to cooking sushi rice.

Some Japanese rice varieties are harder to cook than others, so buying Japanese sushi rice is not always an advantage.

Is it difficult to make tasty vegetarian sushi?

Vegetarian sushi can taste at least as good as sushi with fish.

There are several challenges when it comes to cooking. Most fish species are both soft and fairly firm in the flesh.

When making vegetarian sushi, there will often be some other ingredients such as vegetables that are in play. Vegetables have a completely different texture than fish and must therefore be handled in a completely different way. Some vegetables can be very hard, medium hard and others very soft.

The structure of the vegetables also has an impact on which techniques to use.

These are some of the reasons why it is challenging to make vegetarian sushi.

Can you tell if a fish is fresh?


Unless you work in a fish shop it can be hard to tell when a fish is fresh. One of the area where you should not compromise is the freshness of the fish. There are several reasons for this.

Sushi made with fresh fish have a fantastic taste.
You also avoid your guests or yourself get sick.

Do fishmongers know what type of fish is suitable for sushi?

All fishmongers know what kind of fish is used for sushi.

It is very important to ask for fish for sushi. Fish for sushi has a completely different quality than fish to be fried.

The reason for the difference in quality of fish is that fish for sushi being eaten raw. It is very important to use top quality fish. If you eat raw fish that has become too old you may become ill.

Sushi chef pictures from 2006 in Los Angeles

I just found an old picture from the 2006 from California Sushi Academy and a picture taken last month. Toshi still were his glasses in his forehead.
In 2006, we were all terrified every 14 days because our sushi skills were tested. Toshi is also a judge at sushi competitions in Japan and he is very tough as a judge.

In the first picture, Toshi is checking how clean my chef uniform is and then he is checking how sharp my sushi knife is.

Such a skill test consisted of fillet mackerel, sahimi, nigiri test, sushi roll test and presentation. Not only did he test our skills he also took time on how long we were about to make the food.

Thank god, I became No. 2 in the final and crucial skill test.

A lot has happened since then and today I am not dying of fear.

Catering sushi jobs in Los Angeles

I just sat and read old notes from my Japanese sushi chef Toshi sensei.
I stumbled upon this internship log from 2006 and I can not help but to think back on the many cozy and busy hours in the Sushi bar in Los Angeles.

Catering job at the film company Paramount Pictures in Hollywood and catering jobs with celebrities in Beverly Hills, Bel Air area. Gated areas that require authentication to access.

Private homes in the price range 70 millions, parties, bodyguards and a wealth that I have not seen elsewhere.

It was an exciting time.
