Vegetar sushiYes there are undoubtedly several gastronomic possibilities in the vegetarian kitchen.

As you know a tomato is not just a tomato. There are several hundred different tomato varieties and each with their own unique flavor and nuances.

Since everything is eaten raw when it comes to sushi the sushi chef’s skills is really tested, as it requires a longer preparation and clarification of the individual vegetables.

Vegetarian Sushi must be at least as beautiful in presentation, delicate and tasty as sushi with fish.

What seafood is best for sushi?

FiskehandlerIn Denmark there are many types of fish og shellfish which are not used for sushi.

In Japan you can find a large selection of shrimps. The shrimps has a size, taste and character that you can only find in Japan.

In Japan you can get several different types of squid which are used in sushi restaurants. Sea urchins are extremely popular in Japanese sushi restaurants and they have delightful taste.

Which knife do you use to cut fish?

Sushi knifeAs you probably know it is best to use a sushi knife to cut fish for sushi.

There are several different types of knives and not all of them is suitable. I prefer to use a good Japanese sushi knife sushi.

The Japanese are the ones who know most about sushi and the kitchen utensil used for sushi. The Japanese knife blade has a slope which you can not find on European sushi knife.

For those who do not know is a world difference in taste, depending on whether the fish are cut with a European knife or Japanese sushi knife.

What is Japanese nigri?

NigiriMany have a perception of nigiri that it is a lump of rice with a piece of fish. It can be like that. When you only use a few ingredients the slightest error or mistake can be seen and tasted.

Japanese chefs use several years to learn to cook rice to perfection. If you do not cook the rice to perfection it will affect the dining experience. Fish are not just fish. It is very important know about the structure, texture, and the way you should handle the fish.

Japanese chefs use various techniques to form a nigiri. Some techniques take years to master.
The nigiri must be little firm yet melt in your mouth when you take a bite.

Do Japanese sushi chefs use chili mayonnaise?

Zoë EscherIn Japan, I have never encountered chili mayonnaise.

In Japan sushi chef uses different raw materials on top on nigiri sushi like herbs, Japanese vegetables, egg, homemade soy sauce and marinade to give the whole dining experience an extra dimension.

In the US chili mayonnaise is used in very small quantities. The only fish that uses chili mayonnaise is tuna in which it is typically mixed in a tuna tartar.

In Denmark, there are many restaurants that uses chili mayonnaise in many context like a ketchup.
I think that is a pity because you will miss out the finer flavors of the fish and the interaction between the various ingredients.

But it is an individual choice.

Tokyo: Review of 1 Michelin sushi restaurant Tokami

About once a year I travel to Tokyo, where I eat at tasty sushi restaurants.

Sushi Tokami located in the exclusive shopping district Ginza in Tokyo it’s a restaurant that I have visited in 2015.
The restaurant has only been around for two years, but in a very short, the restaurant has attracted attention with their tasty sushi. I highly recommend the restaurant if you stay in Tokyo.

Tokyo: Review of restaurant Sushi–Kinoshita

About once a year I travel to Tokyo, where I eat at tasty sushi restaurants.

Sushi–Kinoshita is the best sushi restaurant located at the Tsukiji Fish Market in Tokyo. It is a restaurant that I have visited in 2014 and again in 2015. Their sushi is very tasty and it is a restaurant that I highly recommend.

Sushi Iwa is located in the exclusive shopping district Ginza in Tokyo it’s a restaurant that I have visited in 2014. It is a restaurant offering sushi of very high quality. I highly recommend the restaurant if you are staying in Tokyo.
