What kind of fish can be eaten raw?


Basically, all fish can be eaten raw. However, there is a big BUT.

Not all types of fish are suitable for eating raw. There are several reasons for this.

  1. In some fish species, the structure of the fish meat is of a quality that makes them unsuitable for being eaten raw. It requires you to be a Japanese trained sushi chef to be able to see that.
  2. The place where fish has been caught plays an important factor. There are some places where the world’s oceans are having a hard time due to local pollution. Fish caught in those places should never be eaten raw.
  3. Fish sold at fish auctions is divided into quality grades. Everything that is eaten raw must be of the best quality to avoid getting sick. It requires you to be a Japanese trained sushi chef to be able to see that too.

Can all types of fish be used for sushi?

For fish to approved for sushi the fish has to meet specific requirements. Fish used for sushi have the finest quality and the reason that is that fish is eaten raw.

Most people know that the tuna is a threatened fish species.
It is partly true. The tuna used for sushi is threatened. There is plenty of tuna in the sea which just cannot be used for sushi because the quality is not high enough.

It is the fishmongers who know if the fish is suitable for sushi. This is because they know where they bought the fish.

What is the advantage of using fish while they are in season?

FiskThere are many advantages in using fish that are in season.

They are above all cheaper. You may find that the price falls quite a bit because the fishmonger has plenty of that specific fish.

You also get the opportunity to taste several different kinds. Since each season are characterized by different types of fish.

Please be aware that the fish must have a freshness and quality so it is suitable for sushi. You must ask the fishmonger who can tell you more about the quality of the fish he sells.

What is sashimi?

SashimiSashimi is raw fish slices without rice.

It is a dish which the fish slices are cut in such a way that they highlight the fish’s qualities.

Sashimi slices is not the same fish slices used for Nigiri. Sashimi slices are larger and abroad will often be square and 1 cm. thick.
This is because the sashimi dish in countries like Japan can be a full meal.

The picture shows a sashimi plate in Tokyo as you can see several different seafood had been used to create the dish.
The size of the dish is larger than what you typically experience in Europe as it is for 2 people.
