When tuna is best!

In Japan you can buy tuna of different qualities. Some tuna fish are more exclusive than others.

It is relatively new that you can buy tuna of high quality in Europe.

A quality that is hard to get since the Japanese are a people who value tuna of the highest quality. They are also a population that would like to pay for quality.

The pictures show tuna of high quality.  I prefer simplicity when it comes to sushi so I can really taste the quality of the fish. However, I NEVER compromise on the Japanese techniques for preparing the food for sushi.

What is the advantage of using fish while they are in season?

FiskThere are many advantages in using fish that are in season.

They are above all cheaper. You may find that the price falls quite a bit because the fishmonger has plenty of that specific fish.

You also get the opportunity to taste several different kinds. Since each season are characterized by different types of fish.

Please be aware that the fish must have a freshness and quality so it is suitable for sushi. You must ask the fishmonger who can tell you more about the quality of the fish he sells.

Sushi chef pictures from 2006 in Los Angeles

I just found an old picture from the 2006 from California Sushi Academy and a picture taken last month. Toshi still were his glasses in his forehead.
In 2006, we were all terrified every 14 days because our sushi skills were tested. Toshi is also a judge at sushi competitions in Japan and he is very tough as a judge.

In the first picture, Toshi is checking how clean my chef uniform is and then he is checking how sharp my sushi knife is.

Such a skill test consisted of fillet mackerel, sahimi, nigiri test, sushi roll test and presentation. Not only did he test our skills he also took time on how long we were about to make the food.

Thank god, I became No. 2 in the final and crucial skill test.

A lot has happened since then and today I am not dying of fear.

Have you ever tasted sushi prepared with seasonal fish?

FiskAs you very well an aware of there is many local fish of very high quality. Fish that are suitable and perfect for sushi but they are very often exported abroad.
For some strange reason mostly tuna, salmon and white fish find their way to sushi restaurants in many countries.

It is a pity that there are many local fish which are suitable for sushi but not being used. They have unique flavors and taste.
If want to try to use local fish for sushi you have to make sure that the fish is of best quality possible.

How big is the selection of fish for sushi in Europe?

Denmark is a small country with about 5 mio citizens compared to Japan where only 20 million citizens in Tokyo.

Since Denmark is a small country the demand for fish is small too.

In Japan it is very normal that there are approximately 20 different high quality  fish on the menu in a Japanese sushi restaurant. In Denmark most people know of tuna, whitefish, salmon and prawns for sushi.

Denmark do have national high quality fish which are not used for sushi. I do not know why. But the Danish people will miss out unique flavors because they can never try different types of fish during a meal.

Los Angeles is a city with many Japanese sushi chefs

As a sushi chef Bar Hayama is the restaurant I know best. In 2006 I was trained to become a sushi chef at California Sushi Academy. Next to the culinary school were Toshi’s sushi restaurant where we worked in the sushi bar and did catering.

In 2012, I was back in LA where my teacher Toshi introduced me to a nigiri technique that takes 20 years of master.

There is a big difference between whether you are trained by Japanese sushi chefs or trained in Denmark.

Japanese sushi chefs have other work procedure and use completely different techniques than European sushi chefs. When I work with Japanese sushi chefs with 36 years of experience the quality and taste of the sushi being produced is something completely different.

The reason why you should eat seaweed for sushi!

Most people have heard that it is healthy to eat seaweed.

There are also more and more restaurants in Europe that have begun to use seaweed in their food.

For sushi there is a very special seaweed used which is grown on the bottom of the ocean like oats grown in Europe. The seaweed sushi is a very special vegetable. It is the vegetable in the world that contains the most vitamins and minerals. A sheet of sushi nori typically used for futomaki (the big roll) corresponds to 600 gram vegetables.

So with quite a few changes in your habits you can quickly eat 600 gram of vegetables.

What prefers does Japanese prefer to drink for their sushi meal?

It depends a little on whether they eat sushi on a weekday or an evening at the weekend.

As a starting point, the Japanese prefer to drink an ice-cold classic beer with their sushi. The Japanese are a beer people and they value a good beer for the food. However, it is also Japanese who prefers a cup of green tea for the food.

On weekends where the Japanese are free and have more time to sit and eat a meal for several hours. There, the Japanese will also tend to drink sake for sushi.

In Japan, the range of sake is at least as large as the selection of wines in a European supermarket. Therefore, a sushi restaurant will serve sake within various price levels which are closely aligned to the menu that is served.

Which vegetable is really good for sushi?

Farmers markets

There are several different vegetables that are suitable to be used for sushi.

In Denmark you can get different kinds of asparagus it is a vegetable that thrives in Denmark. The asparagus season is in spring. In Copenhagen you can go to the farmers market that sells different kinds of asparagus with unique aromas and flavores.
The supermarket usual has one kind of asparagues.

Asparagus is vegetable that is perfect for sushi since you can use it in different ways.

The season in spring is quite short so I encourage you to buy different varieties of different quality and enjoy the different flavors of taste. You don’t necessarily have to make sushi. You can also steam them quite easily and eat them with a little butter and salt.

How the Japanese fish monger keeps fish in Tokyo

The Japanese have some strict rules for handling fish. On the cooking class I teach I follow the Japanese rules which are more strictly than the Danish rules. I do this for the health of the students.

It does matter how fish are stored.
All fish species have their own bacteria and to prevent the different bacteria from being transferred to each other it is best to keep fish separate.

In Japan, it is not enough that the different fish are kept separate. They are also wrapped in tightly closed films so that the fish do not dry out.
It is also important keep the fish cold all the time unless they are used in the preparation of sushi.
