What is Japanese nigri?

NigiriMany have a perception of nigiri that it is a lump of rice with a piece of fish. It can be like that. When you only use a few ingredients the slightest error or mistake can be seen and tasted.

Japanese chefs use several years to learn to cook rice to perfection. If you do not cook the rice to perfection it will affect the dining experience. Fish are not just fish. It is very important know about the structure, texture, and the way you should handle the fish.

Japanese chefs use various techniques to form a nigiri. Some techniques take years to master.
The nigiri must be little firm yet melt in your mouth when you take a bite.

Do Japanese sushi chefs use chili mayonnaise?

Zoë EscherIn Japan, I have never encountered chili mayonnaise.

In Japan sushi chef uses different raw materials on top on nigiri sushi like herbs, Japanese vegetables, egg, homemade soy sauce and marinade to give the whole dining experience an extra dimension.

In the US chili mayonnaise is used in very small quantities. The only fish that uses chili mayonnaise is tuna in which it is typically mixed in a tuna tartar.

In Denmark, there are many restaurants that uses chili mayonnaise in many context like a ketchup.
I think that is a pity because you will miss out the finer flavors of the fish and the interaction between the various ingredients.

But it is an individual choice.

Tokyo: Review of restaurant Minokichi

In early June 2015, I visited the restaurant Minokichi located in the district of Shinjuku in Tokyo. Restaurant Minokchi servers a variety of classic Japanese dishes of very high quality.

We chose to eat at that restaurant because their Japanese fondue Shabu Shabu is very tasty. A fondue where different kinds of vegetables, noodles and beef cooked in a deep pan, then the individual pieces are dipped in a sauce before being eaten. We chose a larger menu, which consisted of several dishes.
Below you can find picture from the menu.

London: Review of restaurant Yashin Sushi & Bar

Monday, I had lunch at London’s best Japanese sushi restaurant named Yashin Sushi & Bar located on High St. Kensington. Their sushi chefs are in a class of their own they master the Japanese techniques at their fingertips and they have many years of experience.

I was served a miso soup, a salad and the chef’s selection of sushi that day.

The food was really nice. The rice was perfect, the fish melted in the mouth and the various toppings added an extra dimension to the nigiri pieces.

The roll containing the Yellowtail fish tasted fantastic, it was crispy and there was a good balance of the various ingredients. It is not the last time I eat there. Below you will find a few pictures.
