Which nigiri piece outside of Japan is your favorite?

When I’m in Japan I eat many nigiri pieces with different kinds of fish. I also like fish that I do not know for expanding my horizon.

When I stay in California I always eat at my Japanese sushi chef instructor sushi restaurant. On his menu there is a certain nigiri piece that is a must and it is “Yellowtail with Myoga”, served with a secret sauce.

Yellowtail is white tuna a fish as very popular fish in the US and Japan. Myoga is a Japanese ginger which has a quite unique flavor and aromas.

It’s a nigiri piece that you can only get served in the United States or in Japan. I choose to get it served when I’m in the United States because the Japanese sushi restaurants in Tokyo have so many other fish and taste to offer.

This is why I love Japanese gastronomy!

There are many qualities that make’s the Japanese cuisine one of my favorites. In addition to food quality, the Japanese have a food culture that is not comparable to other countries.

It is a population that often goes out and eats and spends a lot of time on restaurant visits because in Japan there is a way to be together. This means that on every street in Tokyo there are food stalls, eateries and restaurants that offer everything from classic Japanese food to Michelin restaurants.

The Japanese cuisine offers a lot of different styles as many styles as the whole of European cuisine. It especially makes the city of Tokyo a gastronomic experience beyond the usual.

How often do Japanese go to a restaurant and dine?

The Japanese do go out to dine a lot.
In Europe most people will go to at restaurant and dine when there is a special occasion to celebrate. Some restaurants in Europe do also offer unique gastronomic experience.
In Japan, the Japanese have a different view of going out and dine. In Japan, dining at a restaurant is a way of spending time be together. There is no specific event for going out and dine at a restaurant

This means that the Japanese are dinning at a restaurant several times per a week. In Japan, social gathering often takes place at the many restaurants and eateries that are found on every street in Japan.

Where does the Japanese eat in Tokyo?

TokyoTokyo is the city of the world with the most Michelin star restaurants and that is not by accident. The Japanese are very critical when comes to where to dine and they place very high stanards when it comes to quality of the food and the price.

Basically, it is always best to eat at restaurants where the locals come and it is also true when it comes to Japan. Typically the quality of the restaurants where the Japanese eat in Tokyo is higher than where tourists eat.

In some of the very touristy areas in Tokyo and Kyoto the price is higher than elsewhere while the quality of the food is slightly lower.

You must keep that in mind if you are going to visit Japan.

How do Japanese chefs improve know their professional knowledge?

In Japan, your training will never stop. Most Japanese use their entire lives to get better at their work.

I travel to Japan approx. once a year to develop my skills and to expand my horizons.

I do alo travel to Brussels once a year in December to meet with my Japanese kendo teacher who is headed by a Japanese delegation of 12 highly graduated teachers.

I have been following his training since 2001 and there is still a lot he can teach me. What I learn in Kendo can lalso be used in my work as a Japanese sushi chef. This is because the martial arts kendo and Japanese sushi coccans share the same philosophy.

Japanese architecture in Tokyo

Tokyo is a city full of contrasts.
There is the “old” Japan, which offers small houses located in small streets with many small specialty stores. Looking down a street the small houses will be very different in their design, size and color. The small cozy streets are typically found a bit away from the major main streets.
Modern Japan offers many architectural experiences.
The exclusive European fashion houses will design buildings that differ in size. Arts and culture have also moved into several of the beautiful architectural styles found in the more exclusive areas of Tokyo.

Tokyo: Part 3: Japanese houses

About 30 minutes drive from Tokyo located the city of Kawagoe. In the city there are many small houses from the Edo period also called ancient Japan.

The houses are small, made of wood and have lots of soul and history in themselves. There are many small shops, women in Kimono, green areas and nice restaurants.

What does the Japanese eat for lunch?

The Japanese do enjoy having lunch or dinner at one of Tokyo’s many restaurants.

Most restaurants in major cities have different lunch menus for about 60 DKK.

In their lunch break many Japanese do like to visit one of the many nearby coffee shop or restaurant and eat a quick lunch. A lunch menu often consists of two small dishes and a main course. Dishes do often contain fish, meat, rice, pickles or lettuce. It is also very popular to stop by one of the many noodle stands, the servers noodle soup in just 5 minutes.

For very little money you can get Japanese healthy and nutritious lunch.

Tokyo: Review of 2 Michelin sushirestaurant Nishiazabu Taku

In June 2017, I visited the 2 star michelin sushi restaurant Taku.
The restaurant is located in a quiet side street of Tokyo’s exclusive Ginza shopping area.

It is a small restaurant that seats 8 dining guests. In the sushi bar, two sushi chefs makes sushi for different parties work as sushi makers for the various companies.

I am used to eat authentic Japanese sushi, which is why I let one of the sushi chefs decide the menu. He made a fantastic dinner that featured different starters. It was really delicious and tasty sushi and a tasty dessert. Below you will find pictures from the dinner.
