I would say that it is harder to make vegetarian sushi than sushi with fish. If it is done properly it can also taste better than sushi made with fish.
The reason why it is harder to make vegetarian sushi because the texture of vegetables is very different.
To get a vegetable to appear fresh, crisp with lots of flavor and visually beautiful you have to use several techniques that highlight green the natural flavors without adding various additives.
Vegetables in their purity and vigor taste absolutely fantastic.
