I have vegetarian friends who are enjoy sushi but they often think the selection is quite small and boring when they visit a sushi restaurant.
Avocado and cucumber are the two ingredients in most vegetarian sushi.
My own experience is that well-made vegetarian sushi tastes absolutely fantastic. It may well turn out to taste better a sushi made with fish.
There are several reasons for this.
Fresh vegetables in season have a great taste and a completely different crispness that fish do not have.
However, the preparation is more complexed the techniques are more complicated.
The vegetables consistency can be a challenge. It take some time to make it tasty but it is time well spend.
