Which chopsticks are best for sushi?

Most sushi restaurants in Denmark use disposable chopsticks. In many Danish homes there are plastic chips.

In Japan, chopsticks are an important cutlery and the Japanese are very conscious about what they are using to eat their food with. Basically, all Japanese food in the Japanese homes is eaten with high quality wood chopsticks. Chopsticks made in an organic material lift the gastronomic experience in a different way than cutlery made of metal.

If you eat your food with plastic cutlery or cold cutlery made of steel the food tastes different. There are man-made materials that are not naturally in the mouth. Chopsticks made of wood harmonize with organic food and support the gastronomic experience. Wood does not change character regardless of the cold or hot food you eat. It adapts to the temperature of the room and the food.

In Japan, chopsticks are not just chopsticks. In my webshop (Danish site) I sell a selection of handmade Japanese chopsticks of different grades and types of wood.
