What is Japanese sake?

Japanese sake is a rice wine and the range of sake is at least as big as the wine selection in Europe.
Japanese sake is divided into 4 categories Kunshu, Soushu, Jun-shu and Juku-shu.
This makes it easier to get an overview of many different types of sake. It does matter which sake is being drunk for starters, for sushi or a red steak.
