Can all vegetables be used for sushi?
When a vegetable is too soft and you put it together with for example scallops in a sushi roll the dinning experience is going to be bad because the sushiroll will be soft and moist.
You also have to be careful to use vegetable with a strong flavor because it create an imbalance.
Do not be afraid to use vegetables in sushi they do add different flavor to the dish.
