Why does sushi taste in Japan in a completely different way than in Denmark?

I meet more and more people on my courses that have been in Japan.

There may be different reasons why sushi in Japan tastes differently. In Japan, you will often find some completely different fish on the menu than what you find at a Danish sushi restaurant.

Japanese sushi chefs in Tokyo also have a completely different background to Danish sushi chefs. The Japanese sushi chefs have a completely different knowledge and uses other techniques in preparing sushi. In Japan, it is very normal for techniques to take 20, 30 or 40 years to master. There is a slightly different approach to ingredients and sushi than what you see at a Danish sushi restaurant.

Which vegetables are not suitable for sushi?

The vegetables are best suited for sushi must have texture and taste.
I’d rather not favor certain vegetables for the reason that there are local specialties that make that one vegetable is preferred over another.

There are always vegetables that are more suitable than others. Vegetables such as peppers, peas, lettuce, green beans, avocado and more.

From time to time I meet a person who is vegetarian or vegan. They are a little challenged when it comes to finding a sushi menu which they find interesting and delicious.

Vegetarian sushi is an underestimated dish.
There are so many different kinds of raw materials that are suitable for vegetarian sushi. Tasty and interesting vegetable beyond avocado and cucumber.

Can vegetarian sushi turn into a gastronomic experience?

Time for new habits – is that you?

The new year 2019 has started.

I am busy planning what will happen during the year. Like so many others I also think that I live a busy life with various activities.

So that’s why I am looking at my eating habits to see how I can live a healthier life with less meat with small changes. One of the small adjustments that I am sure will do more is to eat more sushi in everyday life.

You do not have to eat that much sushi before you have eaten the amount of fish and vegetables that the National Board of Health recommends.

Enjoy the summer with authentic Japanese sushi

Sushi is in my opinion a summer dish.
It is the season that abounds with a large selection of fresh vegetables and fish which are perfect for sushi. Vegetables full of flavors, aromas and unique tastes and, in the right composition, offer a gastronomic experience.

At the sushi course for beginners, attendances get a professional knowledge of sushi and sushi preparation. Knowledge is not enough the attendance do also learn to use different Japanese cooking and hand techniques to produce sushi of a quality so it can be served for a dinner.
Last but not least, attendances learn to handle fish for sushi rolls. You also learn about the classic pitfall when buying fish for sushi.

The reason why sushi rolls have become a popular dish in Denmark

I do not think I know any other country where you eat so many sushi rolls as in Denmark. It is not negative meant.

One of the reasons might be that the Danish people do not eat as much fish as the Japanese do in Tokyo.
The selection of rolls is also very large in Denmark. Most sushi restaurants in Denmark have a large selection of sushi rolls on the menu which offers different flavors. Some restaurants have their own signature scroll.

By eating sushi rolls you will also be eating different kinds of vegetable which support your wellbeing.

Are there sushi restaurants with a vegetarian menu?

Vegetarian sushiVegetarian sushi is a much underrated dish in Europe.
Vegetarian sushi what is prepared with care have a fantastic taste and flavors.
In Denmark the selection is quite small and there is not really a menu for vegetarians.

There may be several reasons for that.

It’s much more complicated to make sushi with vegetables than sushi with fish.
The vegetables need to be prepared using different techniques so they do not lose their crispness, but will enhance their flavors.
The presentation of vegetarian sushi is at least as important. Making vegetarian sushi takes about twice as long to make as it may be the reason that it takes up so little on the menu.
