They have experience the avocado and cucumber being the main two ingredients in vegetarian sushi.
My own experience is that well-made vegetarian sushi tastes absolutely fantastic. It may well turn out to taste better a sushi made with fish.
There are several reasons for this.
Fresh vegetables in season have a great taste and a completely different texture that fish do not have.
However, the preparation takes longer and when the techniques are used to highlight the vegetables grades is broader.
High quality, fresh and clean vegetables taste very good.
What also can be challenge with vegetables is their consistency.
